4 Fast Recipes for Leftover Mashed Potatoes

Reuse leftover mashed potatoes for 4 quick, tasty dinners and side dishes.

Thanksgiving means leftovers, and leftovers can get boring fast. So here are a few alternatives to just microwaving the mountains of mashed potatoes you have.

1. Potato Pancakes

3 cups chilled mashed potatoes
2/3 cup shredded cheddar cheese
2 tablespoons chopped scallions
1 egg, beaten
3 tablespoons flour
4 tablespoons vegetable oil
1/2 cup flour
Cream cheese or sour cream for garnish


  1. Combine leftover mashed potatoes, shredded cheddar cheese, chopped scallions, beaten egg and 3 tablespoons of flour in a large bowl
  2. Roll about a dozen 2-inch balls and flatten to about 1/2-inch thick
  3. Add 1/2 cup of flour to a shallow dish, and lightly coat each potato disk with flour
  4. Heat vegetable oil in a pan on medium-high heat until it spatters
  5. Add disks and cook until crispy (about 3 minutes on each side)
  6. Serve with a dollop of cream cheese or sour cream

2. Duchess Potatoes

2 cups room temperature mashed potatoes
1 egg, beaten
2 tablespoons butter, melted
Piping bag

Tip: For this recipe, you want to make sure that the mashed potatoes are room temperature. If they are not, simply microwave them until they are warm, but not hot.


  1. Preheat your oven to 400 F
  2. Once at room temperature, mash in 1 slightly beaten egg until potatoes are smooth
  3. Transfer potatoes to a piping bag fitted with a large star tip
  4. Pipe potatoes onto baking sheet to form swirling peaks (about 2 inches across)
  5. Brush gently with additional melted butter and bake at 400 F for 15-20 minutes, or until golden brown

3. Easy Shepherd’s Pie

1 medium onion, chopped
3 carrots, chopped
1 tablespoon olive oil
1 1/2 pounds ground beef
1 packet beef gravy
1 cup cold water
2 1/2 cups mashed potatoes


  1. Preheat your oven to 350 F
  2. Sauté onions and carrots on medium heat with the olive oil
  3. Add ground beef and cook until browned
  4. Mix together 1 packet of beef gravy with 1 cup cold water. Add gravy to ground beef and cook until it has thickened
  5. Place beef mixture in a 9-by-13-inch baking dish. Distribute mashed potatoes on top
  6. Bake at 350 F for about 30 minutes or until potatoes have browned slightly
