10 Easy Dinners That Start With a Rotisserie Chicken

A pre-cooked bird is a superstar shortcut for fast and easy weeknight meals.

When it comes to easy, almost-home-cooked dinners, you’ll have a hard time beating a rotisserie chicken. And if you’ve got a few minutes and some pantry basics on hand, you can take that pre-cooked bird and turn it into something amazing:

  • Add tortillas. If you have tortillas, you have multiple options. Soft tacos, quesadillas, and burritos require little more than assembly: Set out shredded cheese, canned black beans, chopped or shredded vegetables, salsa, and sour cream, and let each family member make his or her own. Got a little more time? Check out these yummy baked taquitos.
  • Pie it. Simmer some chopped onions, carrots, and celery in broth, thickened with a bit of cream or flour and butter. Add chopped chicken meat, frozen peas, and frozen corn kernels, transfer to a baking dish, then top with a prepared piecrust. Brush with egg, bake, and BOOM. Chicken potpie. (Easier still? Use canned vegetables and cream of chicken soup!)
  • Scatter it. Spread some barbecue sauce on store-bought pizza crust (even quicker: use flatbread), then top with diced chicken, thinly sliced red onion, and shredded cheddar or jack cheese: BBQ chicken pizza.
  • Toss it. What kind of fresh produce do you have on hand? Chop vegetables and fruit along with the chicken, add some canned chickpeas, maybe a little feta or Parmesan cheese, and you’ve got a rockin’ chopped salad. Shred instead of chop, and you can make this Chinese chicken salad.

  • Roll it. Put chicken and vegetables in a wrap and add a quick condiment, like in this chicken tzatziki wrap.
  • Bowl it. Super-comforting chicken soup with herbed dumplings is the perfect way to end the day.
  • Pull it. Toss shredded chicken meat with prepared barbecue sauce and serve on toasted buns with slaw -- instant pulled chicken sandwiches.
  • Noodle it. Put some creamy peanut butter in the blender along with fresh garlic, ginger, soy sauce, lime juice, and a pinch of red pepper flakes. With the motor running, add enough warm water to make a sauce. Pour over cooked linguine along with shredded chicken meat and cucumbers, carrots, and red peppers.
  • Save those bones. After dinner, toss them into the slow cooker with carrots, celery, onion, and fresh herbs, plus cold water to cover. Let it go on LOW overnight, and wake up to the most ridiculously easy homemade chicken broth ever.
