For some people, leftovers are the best part of the holiday meal. For others, leftovers simply take up prime real estate in the fridge.

Both groups will be happy with our lineup of Thanksgiving leftovers recipes — ideas that touch on classics like turkey sandwiches and soup and those that move beyond into recipes that look and feel very different from the traditional meal: frittatas, waffles and baked apples, anyone?

1. Turkey Sandwich
A good turkey sandwich is the classic Thanksgiving leftover food. Our version boasts cranberry sauce, bacon and crisp lettuce for the ultimate in post-holiday lunches.

2. Mashed Potato Pancakes
When mashed potatoes are formed into quick patties with a bit of flour and herbs, they become a new meal entirely — and one that can be served from breakfast through dinner.

3. Green Bean Frittata
Sometimes having a lot of leftover green veggies can be a challenge. They don’t last an incredibly long time in the refrigerator, and they’re usually not the first to go. But folding them into a delicious, savory frittata is a sure way to make sure they’ll be enjoyed the very next morning.

4. Waffles and Cranberry Sauce
There are many ways to use up that leftover cranberry sauce, but we love the idea of bringing it to the breakfast table with healthy yet hearty whole-grain cranberry waffles.

5. Baked Apples and Stuffing
Before even putting the stuffing in the oven the first time, if it looks like it’s going to be too much for your crowd, reserve some to stuff into apples and bake them until soft.
