8 Easy, End-of-Summer Deserts

With so many delicious fruits in season, now’s the best time to enjoy these sweet treats.

Late summer is the time of year when farmers’ markets and store shelves are practically overflowing with fresh, ripe, delicious fruit—and that’s an amazing treat! From peaches and plums to apples, pears, berries, melons and more, you can find a whole healthful, juicy rainbow of flavors to chose from and share with your family.

And while fruit tastes just perfect on its own, of course, with all this abundance at peak season just now, this is also the perfect time to bake up or mix together some extra special, easy, sweet and summery deserts. What’s more, you can freeze some, too, to enjoy later when the temperatures drop and you’re seriously longing for these golden days of sunshine. Here are a few classic favorites, and some with twists, to inspire you to savor these last few weeks of the season.

1. Berry or peach crumble: Some recipes for this are vegan; some call for rolled oats to add extra crunch. Many use cinnamon or nutmeg in the crumble for an added kick. Whatever recipe or summer fruit you chose for this dish, you can’t go wrong. It’s all so good!

2. Plum or apricot tarte: These French versions of pie not only taste delicious, with their touch of tang or tartness from the stone fruit to cut through the doughy crust, they also look beautiful, and make for a great picnic or party treat, too.

3. Blueberry or blackberry muffins: Make these for breakfast or brunch, and freeze a few for a special after-school treat when autumn’s in full swing. Add a crumble on top with cinnamon for extra decadence. Another fun twist: blueberry monkey bread!

4. Watermelon and mint salad: This is one of our all-time favorite deserts, and it takes just minutes to prepare. Cube or scoop out the melon, squeeze a little lime over if you want a kick, and tear up a handful of fresh mint leaves, tossing it all together. This refreshing treat is heavenly on a hot beach day, or for a beach picnic or barbecue.

5. Grilled peaches or pineapple: While pineapple is not a local fruit, for us, it still tastes great on the grill after a hearty BBQ dinner. And grilled peaches are even sweeter! Just slice in half (or in slices, for the pineapple) and grill on low heat for a couple of minutes per side to get that caramelized, smoky taste that’s so unique to summer.

6. Strawberry s’mores: Slide some sliced strawberries between layers of chocolate, graham crackers and toasted marshmallows (the microwave works, too – top a graham cracker with a marshmallow and heat for a few seconds until puffed and warm, then layer with the other toppings). The fruit adds a perfect juiciness to cut through the gooey crunch and richness of this kid-favorite desert. 7. Strawberry shortcakes: Bake some flaky, quick biscuits, and whip up a little sweetened whipped cream with a hint of vanilla. Layer the two, and top it all with a heaping of sliced, juicy berries. 8. Apricot no-bake cheesecake: Fill a graham cracker crust with a mixture cream cheese and whipped cream folded together, and refrigerate to set. Top with slices of fresh apricots (or peaches,) and drizzle a little caramel on top if you like. This rich, cool treat with a twist tastes amazing when the fruit’s ripe and in season.
