Buffalo Wings 5 Ways

Welcome to football season! Gather ’round the TV and treat your friends and family to a classic — Buffalo wings! These recipes can help you spice them up with a variety of sauces and cool them off with a creamy homemade blue cheese dip.

Classic Chicken Wings
Serves: 6
Prep time: 30 minutes
Cook time: 50 minutes

Ingredients
4 pounds chicken wings
1 teaspoon salt
1/2 teaspoon ground black pepper 

Instructions

  1. Heat the oven to 425 F
  2. Line two straight-sided cookie sheets with foil and place a cooling rack in each
  3. Coat cooling racks with cooking spray
  4. Using a knife or poultry shears, cut the chicken wings at both joints. Dry chicken wings by dabbing them with a paper towel

Tip: Instead of throwing out the tips, reserve them for chicken stock

  1. Place wing sections on prepared cookie sheets and bake until golden brown, turning once, about 40 minutes
  2. While baking, heat 1 inch of oil in a large pot to 350 F
  3. Fry wings in small batches, making sure not to crowd the pan, until crisp, about 5 minutes, turning once
  4. Before starting another batch let oil temperature rise to 350 F
  5. Repeat until all wings are fried

Hot wings and blue cheese dip — there’s nothing more classic. Simply toss the just-fried wings into the hot sauce to coat and serve with the dip.

1. Classic Hot Sauce
Create the iconic Buffalo-style hot wing sauce at home with just four ingredients.

Ingredients
3 ounces butter
1/3 cup hot sauce
1/2 teaspoon salt
1/4 teaspoon ground black pepper

  1. In a large microwavable bowl melt the butter
  2. Stir in the hot sauce, salt and pepper to combine

2. Asian-inspired Sauce
This is an all-around sauce kids and adults alike will love.

Ingredients
1/4 cup sweet chili sauce
1 1/2 teaspoons reduced-sodium soy sauce
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon chopped scallions
1/4 teaspoon toasted sesame oil

Instructions

  1. In a small bowl mix the chili sauce, soy sauce, garlic, ginger, scallions and sesame oil to combine

Tip: This dip’s flavor develops the longer it sits. If you have time, make it the night before and let the flavors meld overnight.

3. Classic BBQ Sauce
Use our three easy barbecue sauces to add some sweet tang to your hot wings.

4. Sweet and Hot Dust
This mixture is almost magical. It gives wings a crunchy, sweet heat. Make a big batch and try with just about anything — from bacon to chocolate bark to pork chops.

Ingredients
2 1/4 teaspoons chili powder
1 1/2 teaspoons brown sugar
1 teaspoon ground cumin
3/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon garlic powder
1/2 teaspoon ground red pepper
1/4 teaspoon paprika

Instructions

  1. In a small re-sealable plastic bag, mix all ingredients to combine
  2. Drop slightly cooled chicken into the bag and shake to coat

5. Blue Cheese Dip
This sauce has an intense flavor — there’s no doubt that the blue cheese is the star!

Ingredients
5 1/3 ounces blue cheese
5 tablespoons sour cream
1/4 teaspoon dried rosemary, crumbled
1/4 teaspoon ground black pepper

Instructions

  1. In a bowl, using a fork, mash the cheese
  2. Stir in the sour cream, rosemary and pepper to combine

so simple, I love it! why do others recipe make it so complicated? a tip: you can also stop the cooking process after baking (do not fry) to save some calories...er make it healthier.
