Creamy Sausage Risotto Recipe

Your family will love this creamy Italian dish made with savory sausage. Serve as a side dish or main course.

1 tablespoon olive oil
1⁄4 cup diced onions
1⁄2 pound of ground sausage
2 tablespoons apple cider vinegar
2 cups instant rice
1 - 2 cups chicken broth
1 tablespoon butter or butter substitute
1⁄2 cup milk
1⁄4 cup shredded or grated parmesan cheese
Salt and pepper to taste

  1. Heat olive oil in a medium-sized pot over medium heat for 1 minute.
  2. Stir in onions and cook until they begin to break apart, 1- 2 minutes. Add the sausage, breaking it up into smaller pieces with your hands as you put it in the pan. Cook until slightly browned.
  3. Add the apple cider vinegar to the pan, and cook for 2 minutes. Add the instant rice and stir to mix the rice, sausage, onions and vinegar thoroughly. Cook for about 2 more minutes.
  4. Pour in 1 cup of chicken broth and stir. Bring to a simmer and continue cooking until the rice is soft.

Tip: Add additional broth if the mixture gets too dry and the rice does not fully cook. 

  1. When the rice is cooked and soft, lower the heat and stir in the butter, milk and cheese. Cook for an additional 2-3 minutes or until the risotto is thick and creamy. Season with salt and pepper until you achieve the desired flavor.
  2. Serve in a warm bowl.

Tip: Mix a little extra olive oil with chives or green onions to make a colorful, flavorful and elegant garnish to drizzle on top of the risotto before serving.
