Easy Homemade Pasta Recipe

Homemade Pasta without a Pasta Maker
It’s easy. If you can tell the difference between wet and dry you will have fun and end up with a pound of homemade pasta!

Serves: 4
Prep time: 20 minutes, plus up to 4 hours for setting
Cook time: 1 to 3 minutes
Difficulty: Medium 

Ingredients
2 1/2 cups flour
3 large eggs
2 tablespoons olive oil
1 large egg yolk
Ice water

Flour varies based on lots of things. You may need to add a little water here or a little more flour there, but don’t be concerned.

  1. Put the flour in the bowl of a food processor fitted with a blade process. In a liquid measuring cup, put the eggs, oil and yolk. Start the processor and slowly add the wet ingredients. Processes the dough until most of it comes together in a ball. If it is not coming together, then — with the machine running — drip in ice water slowly until it forms a ball
  2. Knead the dough until it is smooth and silky, about 1 minute. Seal it in plastic wrap and leave at room temperature for 30 minutes to 4 hours
  3. Divide dough in quarters. Dust the work surface very lightly with flour. Roll one piece of the dough until you can see the color of your hand through the dough. Move the dough often, making certain that it is not sticking and it is evenly rolled, dusting as needed
  4. Move dough to clean towel and let dry until it is a little leathery, about 20 minutes
  5. Brush off any excess flour. Cut dough into strips. Cook in boiling water until cooked through, about 3 minutes. Drain

Tip: The strips may be dried on a cooling rack and then frozen. Cook frozen pasta strips in boiling water for 3 minutes.

Tip: No food processor? No problem! Pile the flour on a flat work surface and make an indentation about the size of your fist. Drop the wet ingredients in the indentation and slowly fold the mixture together until a dough forms.

Homemade Pasta with an Attachment: Repeat steps 1 and 2 from the above recipe. When the pasta dough is quartered, run the segments through the pasta attachment of your stand mixer until you can see your hand through the dough. Let the segments dry for a bit on a paper towel and run them through the attachment again with the blades down. Boil for 1 to 3 minutes and enjoy!
