Easy Lemon Bars Recipe

Create one of summer’s sweetest treats with our simple recipe for lemon bars.

If you’re looking for a crowd-pleasing summer dessert, you can’t go wrong with lemon bars. They are also easy to transport, making them a great treat to bring to the office, potlucks or picnics.

Tip: Enjoy a classic Southern treat by making a batch of pecan pie cookie bars.

Easy Lemon Bars
Serves: 12
Prep time: 15 minutes
Cooking time: 30 minutes

Ingredients
16 tablespoons or 2 sticks of butter, softened
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup confectioners' sugar
4 beaten eggs
2 cups sugar
4 tablespoons flour
1/4 cup lemon juice
1 tablespoon finely grated lemon peel
Powdered sugar for garnish

Instructions

  1. Preheat oven to 350 F and spray a 9-by-13-inch pan with non-stick cooking spray
  2. Combine butter, flour, powdered sugar and salt in a bowl until the dough resembles small pea-sized pieces
  3. Pat dough into the bottom of the pan evenly
  4. Bake for 10 minutes
  5. Remove crust from oven, and then start to prepare filling while the crust is cooling
  6. For the filling, blend eggs, sugar, flour, lemon juice and lemon peel until all are combined (note it will be lumpy, but will smooth out during baking)
  7. Pour filling over crust
  8. Bake for about 20 minutes or until the sides begin to loosen from the pan
  9. Allow to cool: right before serving, cut into bars, sift with powdered sugar and serve immediately

Tip: You can even customize your bars by adding 1 teaspoon of dried lavender to your filling for a delicate and unique floral flavor. If you want to make a fruit tart, add a layer of fruit filling on top of your lemon filling.

Optional Fruit Layer:
1/3 cup pureed berries
1 egg at room temperature
1/2 cup sugar
3 tablespoons flour
1/3 cup powdered sugar

Instructions

  1. Pour fruit layer over lemon filling before cooking
  2. Continue with the above directions

Weight watchers has an excellent lemon bar recipe with lemon zest. I like to freeze them. I will look it up!

Can we have a healthier alternative. Sweetest treats does not have to be 2 cups of sugar...I would not be able to serve this to my diabetic, allergic friends, family, children and myself.
