Frozen Watermelon Granita Recipe

This refreshing treat is sweet, hydrating and perfect for relaxing in the sunshine.

7 cups watermelon, seeded and chopped (a 4- to 5-pound watermelon)
1/2 cup sugar
2 tablespoons lemon or lime juice
Pinch of salt
Lemon or lime slices, to garnish


  1. Working in batches, purée 2 or 3 handfuls of watermelon at a time in a food processor or blender until smooth
  2. Measure 4 cups puréed watermelon and transfer into a large mixing bowl
  3. Add sugar, citrus juice and salt, whisking until sugar dissolves
  4. Pour mixture into 13-by-9-inch pan and place in freezer for approximately 45 minutes, or until the edges begin to ice
  5. Remove pan from freezer, whisk mixture again and return to freezer and let sit an additional 45 minutes, or until mixture becomes slushy
  6. Remove pan from freezer again, whisk once more and return to freezer
  7. Let sit 3 hours, or until mixture is solid (keep frozen until ready to serve, up to one day in advance)
  8. To serve, scoop granita into bowls or glasses
  9. Garnish with a wedge of fresh watermelon

This is great by the pool in the summer. I served it for our pool party in July. What a splash.

This can be made into a great adult drink if you add some vodka into the mixture. It will not freeze as hard as without vodka. Try adding 1/2 cup and adjust amount in future!!!
