Marinate tasty skirt steak in delicious Chimichurri sauce and then grill it to perfection for a spin on a classic.

2 1⁄2 pounds skirt steak
1 cup Chimichurri sauce
Extra virgin olive oil

  1. Marinate the steak in a 1⁄2-cup of Chimichurri sauce for at least 2 hours.
  2. Oil the grill slats with extra virgin olive oil and a paper towel and set the grill to a high temperature.
  3. Grill the steak to your desired internal temperature, flipping the meat over halfway through cooking.*
  4. Let the grilled steak rest for 10-15 minutes before slicing. Then slice against the grain before serving.
  5. Serve with the remainder of the Chimichurri sauce on top.

*Tip: You will know the grill is hot enough if you can hear a clear sizzle once your steak touches the grill.
