Individual Drop Biscuit Cobblers Recipe

You’ll need: 6 ramekins

Ingredients
1 1/2 cups, plus 3 tablespoons all-purpose flour
3 tablespoons, plus 1 cup sugar
1/2 teaspoon cinnamon
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
6 tablespoons chilled, unsalted butter cut in 1/2 tablespoon pieces (freeze for 10 minutes)
1/2 cup, plus 1 tablespoon sour cream
6 cups organic fresh berries*
2 tablespoons fresh lemon juice
1 tablespoon lemon zest, finely grated
1 small bunch fresh mint
Vanilla ice cream or frozen yogurt

*Tip: Use your favorite fresh berry to customize your cobbler.

  1. Preheat oven to 375 F
  2. Whisk 1 1/2 cups flour, 3 tablespoons sugar, cinnamon, baking powder and salt in a large bowl
  3. Add butter, and using your fingertips, pinch the butter and dry mix together until only pea-size lumps remain
  4. Gently fold in the sour cream
  5. Knead mixture in a bowl until dough forms. Be careful not to over mix, 5-6 turns should bring it all together. (If you over mix, the dough will be tough)
  6. Combine remaining 1 cup sugar, 3 tablespoons flour, berries, lemon juice and lemon zest in another large bowl. Toss together to coat the berries
  7. Pour berry mixture evenly into 6-ounce ramekins. Add biscuit topping into quarter-sized crumbles over the berries
  8. Bake for 20-25 minutes, until the juices are thick and bubbling and topping is deep golden brown
  9. Let cool for at least 1 hour. Serve with vanilla frozen yogurt or vanilla bean ice cream. Garnish with mint and lemon zest
