Cook beans in boiling water for 3-5 minutes, to desired doneness. To preserve their vivid color, blanch them: Transfer beans to a bowl of ice water with a slotted spoon and let soak for 5 minutes. Drain, season and serve, or sauté in butter for added flavor.

As a side, green beans complement just about anything, especially chicken, pork, beef and salmon dishes. Season them simply, with flavorings like fresh lemon zest, toasted slivered almonds, shaved Parmesan, garlic salt, caramelized onions or grated ginger.
