No-Bake Chocolate Cookies

Use chef Martita Jara’s scrumptious cookie recipe that requires no baking at all.

1⁄2 cup agave nectar
1/3 cup Dutch unsweetened cocoa powder
1⁄4 cup unsweetened almond milk
1⁄4 cup coconut oil
1⁄2 cup peanut butter
3 cups gluten free corn flakes
1/3 cup shredded coconut
1⁄4 cup semi sweet mini chocolate chips (dairy, gluten & sugar free)
1 teaspoon vanilla extract
1 pinch of kosher salt

  1. In a medium saucepan, mix together the agave nectar, cocoa powder, almond milk and coconut oil. Place the pot over medium-heat and bring the mixture to a slight boil, continue stirring for about 1 minute until the ingredients are combined. Remove the saucepan from the heat and set it aside
  2. In a mixing bowl combine the peanut butter, corn flakes, coconut, chocolate chips, vanilla and salt. Add the melted chocolate sauce from the saucepan to the bowl, and stir all of ingredients together until they are well combined
  3. Using a small ice cream scoop, drop scoops of the cookie mix on a parchment lined baking sheet. Shape the cookie mix scoops into balls with your cleaned hands to form rounded cookies. Place the cookie filled baking sheet in the refrigerator for about 20 minutes before serving the cookies
  4. To store the cookies, keep them in an airtight container in the refrigerator
