Peach and Cherry Crepe Recipe

Batter Recipe

INGREDIENTS
2 large eggs
3⁄4 cup milk
1⁄2 cup water
1 cup flour
1 teaspoon sugar
2 teaspoons vanilla
3 tablespoons melted butter
Butter, for coating pan

INGREDIENTS
2 cups frozen sliced peaches, thawed and chopped
2 cups frozen pitted cherries, thawed and chopped
2 1/2 tablespoons sugar

INSTRUCTIONS

Combine all filling ingredients in a small bowl, mix and set aside.

CREPE INSTRUCTIONS

1. Blend all batter ingredients together until well blended.
2. Cover batter with plastic and refrigerate for 1 hour.
3. After one hour, heat a small non-stick pan on medium-high heat. Add a small square of butter to coat the pan.
4. Pour about a 1⁄4 cup of batter into the center of pan and swirl to spread evenly. Allow it to cook for about 30 seconds then turn over and cook for another 10-15 seconds. Remove crepe and set aside. Continue to do this until batter is gone.
5. Fill each crepe with about 2 tablespoons of the filling mixture then roll up.
6. Place two filled crepes per plate, cover with the crepe topping (listed below) and serve immediately.

Topping Ideas
In a small bowl, whisk together 11⁄2 cup plain Greek non-fat yogurt and 3 tablespoons honey into a smooth and creamy consistency to top your crepes.
