Peanut Butter Cup Recipe

Gather the kids and make a perennial favorite: peanut butter cups!

Ingredients
2 cups creamy peanut butter
1/4 cup unsalted butter, room temperature
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 1/2 cups confectioner’s sugar
2 cups semisweet chocolate chips
4 tablespoons shortening
24 sturdy, foil mini-cupcake liners

Instructions

  1. In a large bowl, mix peanut butter, butter, salt, vanilla and confectioner’s sugar until well combined. Set aside
  2. Melt chocolate and shortening in the microwave for 1 minute. Remove from microwave and stir. Return bowl to microwave for 30 seconds. Remove and stir
  3. Pour chocolate into each liner about 1/3 full and allow it to cool for 2 minutes
  4. Add 1 teaspoon of peanut butter filling to the middle of each cup and fill the rest of the cup with the remaining chocolate
  5. Refrigerate the peanut butter cups for 1 hour before serving

What's empowering is the ability to make them as sweet as we like... Use our own choice of peanut butter,.., I might even switch it out for dark chocolate mix with Almond Butter!!! I LOOOoove Reese's,.., and I am grateful for this recipe. Be empowered!
