Roasted Salmon with Mango BBQ Sauce

Mango BBQ Sauce

2 cups sweet onions, chopped
12 ounces jar roasted red peppers, drained and chopped
14 ounces can diced tomato
1⁄2 teaspoon garlic, chopped
1 1⁄2 cups frozen mango, chopped and thawed
3 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
2-3 teaspoons hot sauce
2 tablespoons raw agave nectar
2 tablespoons extra virgin olive oil
1⁄2 teaspoon Kosher salt
1⁄4 teaspoon fresh ground pepper

2 pounds salmon fillets, preferably center belly cuts, skinned and deboned
1 tablespoons extra virgin olive oil
1⁄2 teaspoon kosher salt
1⁄4 teaspoon fresh ground pepper


  1. Preheat the oven to 400 F
  2. To prepare the BBQ sauce: Heat the olive oil over a medium heat in a medium saucepan. Add the chopped onion with a pinch of salt and pepper and sauté the onions for 8-10 minutes until they are soft and translucent
  3. Add all of remaining ingredients and stir to combine. Turn the heat to low and allow the sauce to simmer for an additional 25 minutes, stirring continually to prevent burning and sticking
  4. Turn the heat off and set the saucepan aside to cool for about 10 minutes before blending the sauce in a blender or food processor. Blend the sauce until it reaches the consistency you like. Adjust the salt and pepper to taste as needed
  5. To prepare the salmon: Place the fillets on an aluminum lined baking sheet and drizzle the olive oil on both sides of all of the fillets. Also, season all of the fillets with the salt and pepper on both sides
  6. Once seasoned, place the baking sheet in the oven for about 10 minutes. After 10 minutes has passed, remove the baking sheet and drizzle about 1 tablespoon of the mango BBQ sauce onto the top of each fillet
  7. Place the baking sheet back into the oven for an additional 5-7 minutes to finish cooking. Remove the baking sheet from the oven and add an additional tablespoon of the mango BBQ sauce on each fillet and serve
