Creating a seasonal salad is easy! Simply choose a few fruits or vegetables that are fresh for the season and add complementary flavors and textures with nuts, seeds, cheeses and herbs. Here are delicious salad recipes to celebrate the flavors of every season.

Spring

In Season:
Arugula
Spinach
Snap peas
Green beans
Beets
Strawberries
Broccoli

Spring: Balsamic Strawberry and Goat Cheese Salad
Serves: 4-6
Prep Time: 15 minutes

Ingredients
5 oz. baby spinach
1 pint strawberries, sliced
1 cup candied walnuts
3 oz. crumbled goat cheese
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
Freshly cracked pepper to taste

Instructions

  1. Transfer spinach into a large salad bowl
  2. Top with strawberries, walnuts and goat cheese
  3. In a small bowl, whisk together the oil and vinegar
  4. Serve salad with vinaigrette

Summer: Raw Zucchini Salad

Ingredients
1 large zucchini, julienned or sliced into ribbons with a vegetable peeler
1 large tomato, cut into wedges
1 large avocado, peeled, pitted and sliced
2 tablespoons toasted pine nuts or walnuts
1/4 cup loosely packed fresh basil leaves, sliced or torn
1/4 cup extra virgin olive oil
2 tablespoons good balsamic vinegar
Pinch of sea salt

Instructions

  1. Place zucchini in a serving bowl
  2. Arrange tomatoes, avocado and basil on top
  3. Sprinkle with pine nuts
  4. Dress with olive oil and balsamic vinegar to taste, and sprinkle with sea salt

Autumn

Apples
Grapes
Pears
Pomegranate
Persimmon
Potatoes
Pumpkins
Winter squash

Fall: Harvest Salad
Yield: Serves 4-6

Ingredients
5 oz. baby kale or other favorite greens
1/2 cup grapes
1/4 cup pomegranate seeds
1 apple, diced
1/4 cup pumpkin seeds
1/4 cup crumbled feta cheese
Favorite dressing or extra virgin olive oil and apple cider vinegar

Instructions

  1. Place greens in a salad bowl and arrange grapes, pomegranate seeds, apple, pumpkin seeds and cheese on top
  2. Toss with dressing just before serving

Winter

In Season:
Winter squash
Kale
Blood oranges
Mandarin oranges
Brussels sprouts
Pears
Pomegranate
Persimmon

Winter: Sweet Potato Salad
Yield: serves 4-6

Ingredients
5 oz. baby spinach
2 medium sweet potatoes, peeled and cubed and roasted
2 tablespoons extra virgin olive oil
1/2 cup dried cranberries
1/4 cup crumbled bleu cheese
1/4 cup candied pecans
Favorite dressing or extra virgin olive oil and apple cider vinegar

Instructions

  1. Transfer lettuce to a large salad bowl and top with dried cranberries, cheese, pecans and cooled roasted sweet potatoes
  2. Toss with dressing just before serving
