Shrimp Mac n’ Cheese
Take this gooey comfort food to a delicious new level by adding plump shrimp.

Ingredients
1 pound elbow macaroni
2 tablespoons unsalted butter
1/4 cup all-purpose flour
3 cups skim milk
2 cups shredded cheddar cheese
1 1/4 cup grated Parmesan cheese
1 pound frozen shrimp, chopped and cooked
1/2 cup panko bread crumbs
2 tablespoons fresh parsley, chopped
Salt and freshly ground black pepper, to taste
Instructions
- Preheat oven to 400 F. Bring a large pot of salted water to a bowl, then stir in pasta and cook according to the directions
- Melt butter in a large saucepan over medium heat. Add flour and cook for one minute, stirring constantly. Add milk, then whisk gently until smooth. Bring mixture to a boil, then reduce to a simmer and cook for 5 minutes, or until the sauce has thickened. Season with salt and pepper
- Place strained and cooled macaroni in a 9-by- 13 inch baking dish. Pour the sauce over the macaroni and mix well with a wooden spoon. Stir in cheddar cheese, 2 cups Parmesan cheese and shrimp
- Sprinkle with remaining Parmesan cheese, panko bread crumbs and parsley. Bake for 15 minutes
Tip: Experiment with other pasta shapes, like shells, penne and ziti. Or mix them together for a fun look and texture the whole family will love!
