Cook Time: 20-30 minutes
Cost: $
Difficulty: Easy

2 tablespoons extra virgin olive oil
1 medium yellow onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 pound lean ground pork
1 tablespoon cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
1 can (20 ounces) diced tomatoes
1 can (15 ounces) pinto beans, drained
1 can (15 ounces) white beans, drained
1 can (15 ounces) kidney beans, drained
1 tablespoon chopped cilantro, plus more for garnish
Sea salt, to taste
Shredded Monterey Jack cheese, to garnish

Tip: For a kid-friendly chili, go light on the spices. Try halving the amount of chili powder and tasting the paprika before you add the full amount — some are hotter than others.
