Super Easy Side Dishes for the Week

Wholesome side dishes that are light, easy and doable any day of the week? Yes, please!

Creamy Potatoes
: Ideal to accompany any type of fish
Serves up to 4 people

4 potatoes
2 cups of heavy cream
1 cup of Parmesan cheese
1 teaspoon of oil
Salt and pepper to taste


  1. Wash the potatoes, peel them and slice them (the thinner the better)
  2. Preheat the oven to 420 F
  3. Set aside 1/4 of the heavy cream
  4. As if you were preparing lasagna, in a baking dish, begin to lay the layers of cream and slices of potatoes. Keep repeating the process until you are out of both. I usually start with the cream and work my way up
  5. Once you have finished your layers top it off with Parmesan cheese
  6. Place it in the oven for two hours, or until the potatoes are tender and the cheese is melted

Kale Chips:
Delicious to accompany chicken and red meats

1 bunch of kale
1 teaspoon of olive oil
Salt & pepper to taste
1 lemon


  1. Preheat the oven to 200 F
  2. Wash the Kale leaves thoroughly and cut them into small pieces
  3. Grease a baking dish with olive oil and coat the leaves
  4. Season the leaves with lemon, salt and pepper
  5. Bake for 20 minutes (until the leaves are crunchy)

Tip: Avoid waiting until the leaves are too dark, they will start to lose their vitamins. For an extra kick, sprinkle garlic powder and Parmesan cheese on them.

Mango and Avocado salad:
A refreshing salad to enjoy with all types of meats

1 avocado
1/2 mango cut up into cubes
1 cucumber cut into cubes
1/2 onion cut up into cubes
1/2 cup of lemon juice
1/2 cup of olive oil
Salt and pepper to taste


  1. Slice the avocado in half and remove the pit
  2. Turn on the grill, once it is very hot, put the avocado on the grill
  3. Remove the avocado halves once they have grill marks and set them aside
  4. Mix the mango, onion, and cucumber
  5. Season with the olive oil, salt and pepper to taste
  6. Place this mixture inside the cavity of the avocado, and enjoy

Asparagus in a Blanket:
Exquisite, almost as if from a restaurant

1 bunch of asparagus
1 pound of pork or turkey bacon
1/2 cup of olive oil
Salt and pepper to taste


  1. Wash the asparagus and cut the hardest part of the stems off
  2. Cook the asparagus by placing them in a boiling pot of water for 2 to 4 minutes. Once you have reached a light green color, remove them and place them in a bowl of cold water with ice. Let them cool in the water for a few seconds and remove them
  3. Once you have removed the asparagus, dry them and wrap each stem with a slice of bacon. Repeat this step until all of your stems are covered
  4. Place the wrapped asparagus in an olive oil greased pan and bake them at 400 F.
  5. Remove them once they are golden brown, anywhere from 10–15 minutes.
