Toaster Pastry Strawberry Shortcake

Chef Jesse Brune creates delicious strawberry shortcake with store-bought toaster pastries and homemade strawberry mouse. Make it for your family with this simple recipe.

1⁄4 cup water
2 cups fresh strawberries, sliced and separated
1 tablespoon honey
1 teaspoon of lime juice
1 cup whipped cream or thawed whipped topping
1⁄2 teaspoon lime zest
Assorted cookie cutters (optional)

  1. Pour water, 1 cup of strawberries, honey and lime juice into a blender and puree completely. Once pureed, set aside
  2. In a medium mixing bowl, combine the whipped topping and the lime zest
  3. Pour about 1 tablespoon of puree into the whipped topping mixture. Gently fold the puree into the whipped topping, creating a strawberry mousse. Continue adding the puree to the mousse in small amounts — be careful not to add too much as this will cause the mousse to lose its fluffed texture. Once mixed, set the mousse in the fridge for 30 minutes
  4. Use small cookie cutters in different shapes to create fun and bite-sized pieces of the toaster pastries
  5. Place one pastry shape in the bottom of a small bowl. Cover the pastry with a generous amount of the mousse
  6. Cover the mousse with strawberry slices, arranging them in rings, until the mousse in covered. Add another layer of mousse and then another layer of strawberries
  7. Place one pastry shape on top of the dish. Create additional shortcakes until all of the ingredients have been used
  8. Once assembled, serve immediately or chill in the fridge for no more than an hour before serving
