Barbecue Stuffed Bell Peppers Recipe

Serve up these hearty stuffed peppers with just the things in the pantry.


Ingredients (serves 4 people)

  • 4 bell peppers, any color

  • 3/4 pound ground beef or turkey

  • 1 medium yellow onion, chopped 

  • 1 cup barbecue sauce, or more to taste

  • 3/4 cup shredded cheddar cheese

Directions

  1. Bring a large pot of salted water to a boil.


  2. Cut tops off of peppers and de-seed. Discard stem, then chop the rest of the tops and reserve. Trim a sliver off the bottom of each pepper so it stands upright, if necessary.


  3. Boil peppers for 3 minutes, drain and let cool.


  4. Preheat oven to 350°F.


  5. In a skillet over medium heat, cook meat until browned, about 5-7 minutes. Spoon excess grease from skillet and discard.


  6. TIP: If you don’t have quite enough meat, use more veggies, or add new ingredients to the mix, like black beans or fresh corn.


  7. Add onion and reserved chopped pepper to skillet and cook for 3 minutes. Stir in barbecue sauce. Remove from heat.


  8. Arrange cooled peppers in a baking dish and fill with meat mixture.


  9. Bake for 20 minutes, then sprinkle with cheese and bake 10 more minutes, or until cheese is bubbly. Serve immediately.

I don't understand what everyone is complaining about. The picture goes right with the recipe. It says TIP use more veggies if u don't have enough meat meaning onions and green peppers. OR if you prefer you can add beans or corn to the mixture. Therefore they have pictured this to show you how it could look. You cook by a recipe not by a picture anyway. It's cooking not rocket science lol

Read the entire recipe FIRST. The picture does match the recipe and it is not incomplete and NO, nobody "forgot to do their job" Geez people, it's a recipe...not a map to some hidden treasure!

If you read the recipe you will notice that step number 6 says: TIP: If you don't have enough meat,use more veggies, or add new ingredients to mix, like black beans or fresh corn.

The recipe instructions say to add the corn and beans (or other veggies) if you would like. The recipe is complete as it is, read the whole thing. Not just the ingredient list.

I would imagine you could still make this recipe by using the ingredients listed and adding corn and black beans. That's what I would do, since obviously, the recipe is incomplete. :-)
