Herbed Meatballs

Whip up a batch of juicy meatballs to use in soups, sandwiches and pasta dishes.

Ingredients (serves 4 people)

  • 1/2 pound ground beef
  • 1/2 pound Italian sausage, removed from casings
  • 1/2 cup Italian bread crumbs
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon ketchup
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste

  1. Place all ingredients in a large bowl and mix with clean hands until well combined.

  2. Mold into 1” balls by hand or with an ice cream scoop, then set aside on a tray.

  3. Heat 2 tablespoons olive oil in a medium-sized saucepan. Cook meatballs in batches, about 2 minutes per side, until browned.
