Top this crunchy cuisine with melty Gouda and ham, sautéed spinach and roasted garlic butter — or even hearty chili and sour cream. Advanced waffle wizards (those with a waffle iron in the kitchen) can even incorporate a variety of flavors and spices into the actual waffle batter before it hits the heat!

Spicy jalapenos and cheddar? Pesto Parmesan? There are no wrong answers with this multitalented morsel, so stop waffling with your waffles!

Here are a few ideas to get you started:

Easy Cheesy Waffles

2 cups all-purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
2 large eggs
2 cups buttermilk
5 tbsp melted butter
3/4 cup grated Parmesan cheese
3/4 cup grated Havarti cheese
1 tsp sugar
Fresh ground black pepper to taste


  1. Whisk eggs, buttermilk and butter in a medium bowl until combined
  2. Separately, mix flour, baking powder and baking soda until combined, and then add to wet mixture
  3. Whisk until smooth
  4. Stir in the rest of the ingredients until well combined
  5. Add 1/3-cup mixture to preheated waffle iron, and cook until desired crispness (5-6 minutes for golden brown)
  6. Slap those babies on a plate and serve with crème fraiche, tomato soup or whatever else sounds delicious!

Cornmeal Waffles Con Queso

Ingredients (Waffles)
1 3/4 cups buttermilk
2 eggs
5 tbsp butter
1 1/2 cups all-purpose flour
1 cup yellow cornmeal
2 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tbsp minced chives
1/2 tsp hot sauce
3 tbsp dried bell pepper flakes

Ingredients (Queso)
1/2 cup prepared salsa
8 oz cream cheese
1 cup grated Monterey Jack cheese
1 bunch scallions, chopped
10 oz chopped spinach

Instructions (Waffles)

  1. Whisk buttermilk, eggs and butter thoroughly, and then add the rest of the ingredients
  2. Combine well, and then let batter sit for ten minutes to soften
  3. Ladle 1/3 cup portions into waffle iron and cook until desired crispness

Instructions (Queso)

  1. Heat salsa, cream cheese and shredded cheese on low heat until mixture is smooth
  2. Stir in scallions and spinach
  3. Serve over waffles and enjoy!

BLT Waffle Sandwich

1 cup all-purpose flour
1 cup buttermilk
3 slices bacon, fried and cut into small pieces
2 oz blue cheese, broken into small pieces
1 tbsp brown sugar
3 tbsp baking powder
1 tsp salt
1 tsp black pepper
1 oz melted butter
2 heirloom tomatoes, in large slices
Crisp iceberg lettuce leaves
1/2 pound bacon strips, fried crispy
Mayonnaise to taste


  1. Mix first 9 ingredients in a bowl until combined
  2. Grease waffle maker and cook batter to preferred crispiness
  3. Place tomato slices, bacon and lettuce on your waffle
  4. Spread mayo to taste on another waffle, and voila! A waffle BLT!
