Seared Tuna Salad with Avocado Dressing

Seared Tuna, Watermelon and Arugula Salad

Tuna, Watermelon and Arugula Salad
1/2 pound fresh yellow fin tuna
2 cups watermelon, cubed
1/4 cup green onions, chopped
1 cup baby arugula, rinsed
1 tablespoon fresh lemon juice
1 teaspoon olive oil
Salt and pepper, to taste 

Avocado Dressing
1 avocado
1 tablespoon lemon juice
1 clove garlic
1 shallot
1/2 cup water
1 teaspoon white vinegar
Salt and pepper, to taste

Tip: If you don’t have arugula or shallots, substitute spinach leaves or 1/8 of a yellow onion.


Tuna, Watermelon & Arugula Salad 

  1. Pre-heat a small pan on the stove over very high heat. (The pan must be very hot to prevent sticking)
  2. Season both sides of the tuna with salt and pepper
  3. Add 1 teaspoon olive oil to the pan and heat for about 30 seconds. When the oil is steaming, it’s at the correct temperature
  4. Using tongs, place the tuna in the pan and sear each side for about 30 seconds
  5. When all sides are browned, remove from heat and place on a plate or cutting board.
  6. Once the tuna has cooled, refrigerate until serving time
  7. In a medium bowl, toss watermelon, arugula and green onion with lemon juice, olive oil, salt and pepper. Refrigerate until serving time

Avocado Dressing

  1. Combine the ingredients in a blender and process at medium speed for about 60-90 seconds, or until desired consistency is reached
  2. Add salt and pepper to taste, then refrigerate until serving time
