Taste of the Nation: Utah’s Cheesy Hash Brown Casserole

Serve Utah’s rich, deliciously cheesy hash brown casserole at your next gathering as an easy side.

Commonly known around Utah as “Funeral Potatoes” for its ability to feed large groups at gatherings, this grimly named potato dish combines frozen hash browns, cheese and corn flakes. Serve it at your next get-together as a crowd-pleasing side dish.

Cheesy Hash Brown Casserole
Serves: 12
Prep time: 10 minutes
Cook time: 50 to 55 minutes
Difficulty: Easy

4 tablespoons unsalted butter
1 medium onion, chopped
1 30-to-32 ounce bag frozen hash brown potatoes, thawed
1 12-ounce can evaporated milk or cream of chicken soup
1 pint sour cream
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 ounces sharp cheddar cheese, grated (about 2 cups)
1 1/2 cups corn flakes or 1 cup panko bread crumbs


  1. Heat oven to 350 F. In a small skillet over medium high heat melt the butter. Add the onion and cook until translucent, about 5 minutes
  2. In a large bowl mix the onions, potatoes, milk, sour cream, flour, salt, pepper and cheese until combined. Pour into 13-by-9-inch pan and smooth the mixture’s top
  3. Crush and sprinkle the corn flakes over the potato mixture. Bake until bubbly at the edges and a knife stuck in the middle is warm to the touch, 50 to 55 minutes
