Pizza Sticks

(Makes 8 sticks)
Cooking spray
1 tube (11 ounces) refrigerated thin crust pizza dough
4 mozzarella string cheese sticks
Pizza sauce, for dipping

1. Preheat oven to 450 F
2. Grease baking sheet with cooking spray, then set aside
3. With a sharp knife, cut pizza dough into 8 equally shaped rectangles, then slice string cheese sticks in half lengthwise
4. Place one string cheese half on each piece of dough. Fold dough over the ends of the cheese, then roll up
5. Place rolls seam-side down on prepared baking sheet
6. Bake until golden brown, about 10 minutes. Serve warm or at room temperature with a side of pizza sauce

Tip: For a grown-up twist, sprinkle pizza sticks with garlic salt, fresh chopped basil and grated Parmesan after the bake.

If you’re packing them for lunch, feel free to prepare the pizza sticks the day before and refrigerate them in a sealed container until you’re ready to use them.

Antipasto Cup

Ingredients (Makes 2 1/2-cup servings)
1 slice (1/2 ounce) salami, chopped
1 mozzarella string cheese stick, chopped
6 cherry tomatoes
6 ripe olives
1 teaspoon Italian dressing

1. Combine all ingredients
2. Refrigerate in a sealed container until ready to use

Tip: If you’re trying to please a picky eater, consider replacing the olives with cooked pasta shells or chopped bell pepper.

How to Make Ahead
This salad can be made three or four days in advance. To store, separate servings into resealable plastic bags and refrigerate.

Sugar Cookie Pizzas

1 tube (16.5 ounces) refrigerated sugar cookie dough
Red food coloring
1 tub (16 ounces) vanilla frosting
1 cup white chocolate chips, melted

1. Bake sugar cookies according to package directions
2. Add a few drops of food coloring to the icing, and then blend
3. Spread cookies with icing, leaving a small “pizza crust” border
4. With a fork, use a quick back and forth motion to drizzle melted white chocolate over each cookie

How to Make Ahead
Cookies can be completely decorated and frozen in a single layer. Once fully frozen, place them in a large resealable plastic bag or container and take out as many as you need, when you need them.

Assemble the Lunch
In a two-compartment plastic container, put pizza sticks on one side and sauce on the other. Or wrap the pizza sticks in foil with a little cup of pizza sauce. And for easy snacking, include a toothpick with the antipasto salad. Pack pizza sticks, salad, cookies and a frozen juice box in an insulated lunchbox — no need to defrost the cookies or juice, they’ll be just the right temperature by lunch!

By packing the lunch yourself — and having made it yourself as well — you can be sure your kids have a healthy lunch, too.
