Peach Salsa Tortilla Bites

Peach Salsa Ingredients
1/2 cup fresh peaches, seeded and diced
1 cup Roma tomatoes, seeded and diced
1/4 cup red onion, diced
1 tablespoon serrano chili, diced
2 tablespoons fresh lime juice
2 tablespoons red wine vinegar
2 tablespoons extra virgin olive oil
1/4 teaspoon sugar
1 teaspoon kosher salt
1/4 teaspoon ground pepper


  1. Place all ingredients in a small mixing bowl, stir to combine well
  2. Cover with plastic wrap and refrigerate for 20 minutes to allow flavors to combine

Tip: To seed a tomato, cut it in half and squeeze it over a bowl or sink until the seeds come out
Tip: You can tell if a lime is ripe if the skin is thin – you will get more juice out of it

Black Bean Ingredients
15 oz. can black beans, with juice
2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon ground pepper
1/8 teaspoon ground cumin
1/4 teaspoon oregano


  1. Place a small saucepan over medium heat and add olive oil to heat
  2. Add black beans with their juices, salt, pepper, cumin and oregano. Stir and allow the ingredients to simmer together for 8 minutes.
  3. Remove from heat and mash together until the beans are in chunks. Cover with lid to keep warm

Additional Ingredients
1 bag of your favorite tortilla chips shaped like scoops
4 oz. arugula or your favorite greens
4 oz. goat cheese
Peach salsa
Black beans

Assembly Instructions
To assemble, place about 24 tortilla chip scoops on a serving platter. Spread each chip with a teaspoon of creamy black beans, add a little arugula, then a teaspoon of peach salsa. Finally, top with a crumble of goat cheese. Enjoy!
