BBQ Chicken Wings with Maple Mustard

Charcoal BBQ grill

1 lb. chicken wings
1 cup yellow mustard
½ cup dijon mustard
2 pinches of Salt
2 pinches of Pepper
¼ cup mustard seeds
¼ cup maple syrup
1 tablespoon canola cooking oil
1 tablespoon apple cider vinegar
Cilantro to Taste


  1. Preheat grill into three zones. Put most of your coals on the left for your hot zone, some in the middle and the least on the right for your cool zone
  2. Combine mustard seeds and maple syrup in a small pan and smoke over grill for approximately 5 minutes keeping careful watch to not burn them. Stir occasionally
  3. Combine yellow mustard, dijon mustard, salt, pepper, canola oil and apple cider vinegar in a bowl. Pour the smoked mustard seeds and maple into the bowl with the rest of the ingredients and stir together. This mixture is the smoked maple mustard sauce
  4. Coat the chicken with half of the smoked maple mustard sauce, setting the rest aside for later. The chicken can be left to marinate in the sauce for 1 to 2 hours for extra flavor or can be placed straight on the grill for speed
  5. Place the coated chicken wings skin side down on the cool zone of the grill for approximately 15 – 20 minutes.
  6. Transfer the wings from the cool zone to the hot zone. Brush the wings quickly to glaze and caramelize them with the remaining amount of sauce that was previously set aside. Flip the wings and glaze the other side of them
  7. Remove the wings from the grill and garnish with cilantro to taste. Serve immediately and enjoy
