Cool Watermelon Salsa Recipe

This light, mild salsa recipe takes advantage of late summer’s ripe and juicy watermelons.

Ingredients (serves 8 people)

  • 3 cups watermelon, pre-cubed and seeded
  • 2 Anaheim peppers, seeded and chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/3 cup red onion, minced
  • 1 clove garlic, minced
  • 2 tablespoons fresh mint leaves, finely chopped
  • 1/2 teaspoon sugar

  1. Combine all ingredients in a large mixing bowl and stir well.

  2. Let chill in the refrigerator for at least 2 hours to allow flavors to blend. Serve with tortilla chips.
