Apple, Pecan and Feta Salad with Strawberry Vinaigrette

Ingredients for Strawberry Balsamic Vinaigrette Dressing
2 tablespoons balsamic vinegar
5 tablespoons olive oil
2 tablespoons honey
1 teaspoon Dijon mustard
5 large strawberries, hulled and sliced (can substitute with defrosted frozen strawberries)
½ teaspoon salt
1/8 teaspoon black pepper

Ingredients for Apple, Pecan and Feta Salad
6 cups mixed greens
2 green apples
1 cup pecans, roughly chopped and toasted
¼ cup cranberries
1/3 cup feta cheese
Juice from lemon wedge


  1. To make the dressing, add all of the vinaigrette ingredients to a food processor or blender and blend until smooth. Add more salt and pepper to taste if needed. Set aside
  2. Core and slice the apples into 1" slices. Squeeze the lemon juice on the apples to prevent browning
  3. To toast the pecans, heat a sauté pan over medium-high heat.  Add the pecans and cook for 5 to 7 minutes. Stir periodically to make sure they toast on both sides and don’t burn.  Remove from heat
  4. In a large bowl, combine the mixed greens, apples, cranberries, feta cheese and toasted pecans
  5. Drizzle with vinaigrette, toss and serve
