Apricot Chocolate Granola Bars
Serves: 15-20

2 cups old fashioned rolled oats
1 cup coconut flakes, unsweetened
1/2 cup almond slivers
1/2 cup walnuts, chopped
1/2 cup flaxseed
1/4 cup roasted salted sunflower seeds
1/2 cup mini dark chocolate chips
1 cup dried apricots chopped
1/2 cup honey
2 tablespoons coconut oil
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt

  1. Preheat oven to 375 F
  2. Combine rolled oats, coconut flakes, almonds and walnuts, and spread them out on a baking sheet. Place in oven for 10 minutes. Remove from heat and set aside
  3. In a mixing bowl combine flaxseed, sunflower seeds, chocolate chips, chopped apricots, honey, 1 tablespoon of coconut oil, cinnamon and salt. Add toasted oat and nut mixture to bowl with other ingredients and stir with a spatula until well combined
  4. Add toasted oat nut mixture to bowl with other ingredients, stir with a spatula until well combined
  5. Line a baking sheet with aluminum foil and remaining tablespoon of coconut oil. Press the mixture into the foil and place in the refrigerator for at least 3 hours to chill
  6. Remove from pan, peel foil off and cut into bars. Wrap individual bars in parchment or plastic wrap and keep in refrigerator
