Beef and Chorizo Burger with Feta

Use Chef Martita Jara’s simple instructions to make a tasty chorizo burger with a spicy topping.

Ingredients for feta topping
1/2 cup fresh feta
1/2 cup tomato seeded and diced
1/2 cup hot house cucumber diced
1/4 cup fresh squeezed lemon juice
2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon ground pepper

Instructions for feta topping
Place all ingredients in a medium size bowl, stir to combine and set aside.

Ingredients for avocado cream
1/2 cup sour cream
2 whole ripe avocados peeled & pit removed
1 jalapeno chopped
1 teaspoon fresh mint
2 tablespoons extra virgin olive oil
3 tablespoons fresh lime juice
2 garlic cloves chopped
1 teaspoon kosher salt
1/2 teaspoon ground pepper

Instructions for avocado cream
Place all ingredients in a blender or food processor and blend until smooth, set aside.

Ingredients for grilled jalapenos
4 jalapenos fresh whole
1 tablespoon extra virgin olive oil
1 teaspoon fresh squeezed lime juice
1/2 teaspoon kosher salt
1/4 teaspoon ground pepper

Instructions for grilled jalapenos

  1. Preheat grill pan or outdoor grill to medium heat

  2. Place jalapenos on a sheet of aluminum foil and drizzle with olive oil

  3. Wrap the foil tightly around the jalapenos and place on preheated oven/grill about 8 minutes. Open foil carefully and check to see if the jalapenos are done; they should look slightly charred. Sprinkle with a pinch of salt & pepper and squeeze 1 teaspoon fresh lime juice over the jalapenos and set aside

Ingredients for patties
3/4 pound ground beef
3/4 pound chorizo

Instructions for patties

  1. Preheat grill pan or outdoor grill to medium heat

  2. In a medium bowl combine the two meats with a pinch of salt & pepper, and then divide the meat mix to form 4 patties

  3. Place patties on a preheated grill, about 4 minutes per side or until you reach your preferred doneness. Set grilled patties aside and cover with aluminum to keep warm

Ingredients for the burger
4 burger buns (pre-sliced)
4 patties
Avocado cream
Grilled jalapenos
Burger topping

Instructions to make the burger

  1. Half the burger buns and toast the insides on the grill until golden brown

  2. Layer 2 tablespoons avocado cream, 1 patty, 1 grilled jalapeno and 2 tablespoons of feta topping in each bun
