Chef Sharone’s Ultimate Chili Recipe

1 pound of ground beef
3 cups of Kidney beans, washed and strained
2 tablespoons olive oil
2 chopped red onions
1 head of garlic finely chopped
1 cup of chopped carrots
4-5 cups of crushed red tomatoes
1 cup tomato paste
3 tablespoons ketchup
1/3 cup chipotle sauce
2-3 tablespoons salt
3 tablespoons brown sugar
1 tablespoon pepper
1 teaspoon ancho chili
1 teaspoon smoked paprika
1 teaspoon dried thyme
2 tablespoons sour cream
1/4 cup chives, chopped
1/4 cup cilantro, chopped

  1. Turn the stove heat to medium-high and in a medium pot, brown the ground beef with the 2 tablespoons of olive oil. Use a fork to break up the meat.
  2. While the meat is cooking, dice the onions and carrots. Finely chop the garlic. Add the onions, carrots and garlic to the meat and stir together. Put on high heat for about 15 minutes to caramelize the flavors.
  3. Remove pot from heat and mix in kidney beans. Add crushed red tomatoes, tomato paste, ketchup, chipotle sauce, brown sugar, salt, pepper, ancho chili, smoked paprika and dried thyme.
  4. Put back on stove at a low heat. Cover and simmer for 1 hour.
  5. Garnish with sour cream, chopped chives and chopped cilantro to taste. Enjoy!
