3 tablespoons Dijon mustard
3 tablespoons minced fresh tarragon leaves (can use thyme, basil or sage)
2 1/2 tablespoons mayonnaise
8 boneless, skinless chicken thighs
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

  1. Preheat the oven to 400 F. Line a rimmed baking sheet with foil
  2. Into a bowl, rip tarragon leaves into small pieces and mix in the Dijon mustard and mayonnaise. Stir well
  3. Season chicken with salt and pepper on both sides
  4. Heat a large skillet to medium high heat, and then add enough oil to coat the bottom of the pan. Add the chicken and sear on both sides until golden brown, about 2-3 minutes per side
  5. Transfer chicken to the baking sheet that’s wrapped in foil. Slather the tops of the chicken with the Dijon mixture. Place chicken in oven until cooked through, about 8 minutes (or until internal temperature reaches 165 F)
  6. Chicken can be served with baked rice for a complete meal
