Chef Carla Hall’s Granny’s Turkey Meatloaf

Chef Carla Hall whips up a delicious meatloaf, inspired by her grandmother’s recipe.

Ingredients (Meatloaf)
2 pounds ground turkey
1 egg, beaten
3/4 cup oatmeal, finely ground
3/4 cup milk
2 teaspoons ground cumin
2 teaspoons ground cayenne pepper
1 tablespoon Kosher salt
2 teaspoons freshly ground black pepper (to taste)
6 garlic cloves, minced
1 1/2 small onion, minced
1 1/2 celery
3 medium carrots
2 tablespoons fresh thyme, chopped
2 tablespoons fresh parsley, chopped
(3) 14-ounce cans, empty with label peeled off

Ingredients (Spicy Tomato Sauce)
2 cups fire-roasted tomatoes
1/4 cup horseradish
2 tablespoons apple cider vinegar
2 tablespoons brown sugar
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce

Instructions (Wet Mix)

  1. Pre-heat oven to 350 F
  2. Put the 2 pounds of turkey inside a large bowl. Do not mush
  3. Pour the oats in a food processor and pulse until they look like sand
  4. Pour the equal parts milk and equal part oats into a separate smaller bowl
  5. Add the cayenne pepper, cumin powder, salt, ground black pepper, and Worcestershire sauce to the small bowl
  6. Crack 1 egg over the mix and stir in with a fork. Let sit for 10 minutes

  1. Rough chop (4 cuts across, 2 cuts in the width) the onions, pulse in the food processor, and add to the wet mix
  2. Repeat for the celery and carrots
  3. Chop the herbs (a quarter cup) with a knife instead of using the food processor. This helps keeps them fresh
  4. Add the entire bowl of wet mix to the turkey/herb bowl and mix
  5. Next, add the herbs and continue to mix gently, ensuring not to over mix

Instructions (Meatloaf)

  1. Line the inside of the can with olive oil, spinning the can as you go
  2. Pack the meatloaf into 3 separate cans, using a spoon to pack all the way to the top
  3. Put in the oven at 350 F for 25-30 minutes. Final internal temperature should be 160 degrees
  4. Once fully cooked, take each turkey roll out of their respective can, pre-heat a skillet over medium heat with olive oil, and let meat sear until golden brown

Instructions (Spicy Tomato Sauce)

  1. Mix the tomato sauce, horseradish, brown sugar, apple cider vinegar, cumin, cayenne pepper, Worcestershire sauce, and salt together in a bowl
  2. Simmer on the stove on low heat while the turkey meatloaf cooks in the oven

Instructions (for Combining Meatloaf and Sauce)

  1. Use any turkey meatloaf juices from the can and stir into the tomato sauce
  2. Once the sauce has simmered and the turkey meatloaf has seared, let the meatloaf cool for five minutes
  3. Slice the three rolls on a plate (5 slices per can)
  4. Lay out on a platter and pour the sauce over the slices
