Light and Easy Spinach Artichoke Dip

Ingredients
6 ounces fresh baby spinach leaves, chopped
14.5 ounce can artichoke hearts, chopped (squeezed dry using cheese cloth)
1 cup shredded mozzarella cheese
¼ cup mozzarella for sprinkling on top
1 cup shredded white cheddar cheese
4 cloves garlic minced
1 jalapeños seeds and diced
2/3 cup plain low fat Greek yogurt
1 teaspoon Worcestershire sauce
½ teaspoon dried oregano
1 teaspoon sea salt
¼ teaspoon pepper

  1. Preheat the oven to 350 F
  2. Combine spinach, artichokes, 1 cup mozzarella cheese, white cheddar cheese, garlic and jalapenos in a large mixing bowl
  3. In a separate small mixing bowl, combine Greek yogurt, Worcestershire sauce, oregano, salt and pepper. Mix well and add to the large mixing bowl
  4. Toss all of the ingredients together very well
  5. Transfer the mixture to a baking dish (1.5 quarts or larger). Sprinkle the remaining ¼ cup of mozzarella cheese over the top
  6. Cover with foil and bake at 350 F for 20 minutes. Remove the foil and continue baking for another 10 to 15 minutes, until the top is golden brown. Serve hot with chips for dipping
