Melted Cheese Dip Recipe

Use Chef Jon Shook’s simple recipe for a high-end cheese dip that’s sure to impress!

1 small wheel of sheep’s milk cheese
3 cups diced leeks
3 cups diced onion
1 tablespoon canola oil
1/4 cup olive oil
8 thin slices of chorizo
1/2 teaspoon salt
1 small sourdough baguette

  1. Preheat oven to 450 F
  2. Place two small pots over medium heat. In one pot, put canola oil and diced onion, along with a pinch of salt. Stir constantly until the onions are caramelized
  3. In the other pot, add diced leeks and a pinch of salt. Turn heat down to low. Put a lid on it, cook for approximately 15-20 minutes until tender
  4. In a small baking dish, add a layer of caramelized onions, a layer of leeks, a layer of thinly sliced Spanish chorizo, and top with one wheel of sheep’s milk cheese. Bake in the oven at 450 F until bubbling (approximately 8-9 minutes). When bubbly, flash in the broiler, until cheese offers a golden-brown top. Serve baking dish on a charging plate with olive oil and grilled sourdough baguette
