Shrimp, Bacon and Potato Corn Chowder

Serves: 5 to 6

Ingredients
6 slices thick-cut turkey bacon, chopped
4 tablespoons olive oil
1½ lbs medium shrimp, peeled and deveined with tails removed
2 cups large yellow onion, chopped
2 garlic cloves, minced
½ teaspoon dried thyme
1 bay leaf
½ teaspoon ground turmeric
½ teaspoon paprika
2 teaspoons sea salt
1 teaspoon freshly ground black pepper
6 cups low-sodium organic chicken stock
1 lb Yukon gold potatoes, peeled and cut into ½" cubes
4 cups frozen organic sweet corn kernels
1 cup half-and-half
3 tablespoons fresh chopped chives for garnish (optional)
½ cup shredded sharp white cheddar cheese for garnish (optional)

Steps
1. In a large pot, heat the olive oil over medium heat. Add the chopped bacon and cook until crisp, about 5 minutes. Remove the bacon with a slotted spoon and set aside in a small bowl

2. Add the shrimp to the pot and cook for about 3 to 4 minutes, until pink on both sides. Stir frequently to avoid overcooking. Remove shrimp with the slotted spoon and set aside

3. Add the onions and garlic to the juices in the pot, and sauté for about 4 minutes, until onions are translucent. Add all the spices: thyme, bay leaf, turmeric, paprika, sea salt and black pepper. Continue cooking, stirring frequently for 2 minutes

4. Add the chicken stock and potatoes, and bring to a boil. Reduce heat and simmer for 15 minutes, or until the potatoes are tender. Add the corn and half-and-half, and cook for another 5 minutes. Turn off the heat

5. Remove 2 cups of soup from the pot and blend (using an immersion blender, food processor or a blender) until smooth and creamy. Do this step in batches, 1 cup at a time, as a precaution while blending hot liquids. Return mixture to the pot along with the shrimp, and stir well

6. Serve the chowder hot and sprinkle with bacon, chives and cheddar cheese if desired
