Veggie Queso Rollup

Use Chef Martita Jara’s instructions to make this delicious, versatile veggie queso rollup.

Ingredients
1 large zucchini, cut lengthwise in 1/2-inch strips
3 bell peppers, cut lengthwise in 1/2-inch strips
2 large tomatoes, cored and halved
1 jalapeno (sliced)
2 cloves garlic minced
1 onion minced
3 tablespoons olive oil
1/4 teaspoon hot Mexican chili powder
2 ears corn, off the cob (1 1/2 cups)
1/2 cup light cream
3/4 cup shredded cheddar
1/4 teaspoon salt
1/4 teaspoon pepper

  1. In a skillet, add 3 tablespoons of olive oil and sauté the zucchini, bell peppers, tomatoes, garlic, onion, and sliced jalapeno over medium heat
  2. Add the hot Mexican chili powder and corn and continue cooking. Stir occasionally until the vegetables are caramelized
  3. Add cream and cheddar then season with salt and pepper. Simmer on a medium-low heat until cheese is melted
  4. Serve queso immediately

Tip: This goes great when rolled up inside a tortilla or as served as a dip in a bowl for chips!
