Chef Martita’s Verde Mac and Cheese

1 pound favorite shape pasta, like elbow macaroni
1 pound sharp cheddar, shredded
1 cup salsa verde
3 tablespoons corn flour
2 cups whole milk
4 cups frozen broccoli florets
6 corn tortillas, diced
5 tablespoons unsalted butter
1 1/4 teaspoons kosher salt
1/2 teaspoon ground black pepper

  1. Preheat oven to 375 F
  2. In a large pot, cook pasta, leaving it slightly firm. Drain and set aside
  3. Place same large pot over medium heat, add 3 tablespoons of olive oil. When oil is hot, add diced corn tortillas, stir about 4 minutes or until tortillas are golden and crisp
  4. Transfer tortillas to plate lined with paper towel to drain oil. Add 1/4 teaspoon of salt to crisp tortillas and set aside
  5. Return pot to stove over low heat with 3 tablespoons of butter. In a bowl, whisk together milk and corn flour. Pour mixture into pot with butter while constantly whisking with other hand. Stir 3-4 minutes or until mixture thickens
  6. Add to the mixture 3 cups of shredded cheese, 1 cup salsa verde, 4 cups frozen broccoli, cooked pasta, tortilla crisps, 1 teaspoon salt, 1/2 teaspoon pepper and use a wooden spoon to stir until well combined
  7. Transfer pasta cheese mixture to a large greased casserole dish, or 6 individual greased baking sheets. Sprinkle remaining cheese overtop, then top with 2 tablespoons of diced butter
  8. Place in preheated over and bake for 15 minutes or until melted and bubbly
