Ingredients
1 (15 ounce) can garbanzo beans, drained and rinsed
1 (15 ounce) can white beans such as cannellini, drained and rinsed
2 cloves garlic
1/2 cup cilantro, chopped
Zest of 1 lemon
1/4 cup lemon juice
1/2 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
1/2 teaspoon ground pepper
1/4 cup extra virgin olive oil
1/4 teaspoon paprika
6 pitas
Sliced veggies (1 red pepper, 1 green pepper, 1 cup baby carrots)

  1. Preheat oven to 375 F
  2. Cut each pita into 8 wedges. Place wedges on baking sheet, drizzle with 2 teaspoons of olive oil, and toss to coat evenly. Spread wedges on baking sheet and bake for 7 minutes or until golden and crispy. Remove from heat, finish with a pinch of kosher salt and set aside
  3. In a food processor fit with a steel blade, add garbanzo beans, white beans, garlic, cilantro, lemon zest, lemon juice, crushed red pepper, salt and pepper. Pulse a couple of times to combine. Turn food processor on and slowly drizzle olive oil through the feed tube until well combined and creamy
  4. Pour hummus into serving bowl, drizzle with 2 teaspoons of olive oil, and finish with pinch of paprika. Serve with your favorite sliced veggies and homemade pita chips
